Nasturtium Overview
This flower variety features variegated foliage when grown to maturity and produces edible flowers in a mix of yellow, cherry, salmon, and crimson.
Historical Significance
The common name “nasturtium” derives from the Latin words for “nose-twister,” humorously describing the common reaction to the taste of the edible leaves. The entire plant has a rich history of culinary use; even the seeds can be pickled as a substitute for capers.
The first known botanical description of this species comes from Spanish botanist Nicolas Monardes, but Carl Linnaeus named the genus Tropaeolum in reference to an ancient Roman “tropaeum,” a pole where the bloody armor and shields of defeated enemies were hung. The plant's bright blossoms reminded him of helmets, while its circular leaves resembled shields.
