Herb Descriptions:

Lettuce Lolla Rossa

Lolla Rossa heirloom lettuce originates from Italy, where it has been sold in the markets of the Turin region for generations. Wild lettuce, the ancestor of modern lettuce, comes from Asia Minor. The ancient historian Herodotus noted its presence on the tables of 6th-century Persian kings, and it became a popular crop throughout Europe. Columbus brought it to the New World, spreading it across North America. Today, lettuce is a staple in gardens worldwide.

Spinach Matador

Matador Viking Spinach (Spinacia oleracea) is an easy-to-grow heirloom spinach dating back to 1933, particularly popular in Italy. It’s a great variety for any Italian recipe calling for spinach, offering both flavor and nutrition.

Spinach Viroflay

Spinach has roots in ancient Persia, reaching the Mediterranean by the 9th century. Known for its medicinal properties and salad greens in the Middle Ages, it became a favorite of Catherine de Medici, who required it at every meal. Dishes served with spinach are often referred to as “Florentine.” Viroflay spinach is a gourmet French heirloom developed before 1866.

Rocket Salad (Arugula)

Rocket, or arugula, is an herb from the mustard family that hails from the Mediterranean region. Its leaves have a peppery, mustard-like flavor and are rich in vitamins A and C, as well as iron. Historically, arugula oil was used in aphrodisiac potions, and it has been a part of Roman meals for centuries, often served as a salad. Today, it’s popular in Italian cuisine, commonly used in fresh salads, pestos, or lightly sautéed.

Rocket Wild Sylvetta

Arugula Sylvetta was introduced to North America by Puritan settlers in the 15th century but gained popularity in American diets during the 1980s. It has been a staple in Mediterranean and Middle Eastern cuisine since antiquity, and as immigration from these regions increased, so did interest in this delicate and spicy green. Arugula Sylvetta quickly became a favorite in haute cuisine, featured in high-end restaurants. Its demand continues to grow as chefs seek innovative ways to use this flavorful herb.
